Much to the surprise of his peers at the time, Kamsat ‘Kam’ Chhuth chose to study home economics in high school. This decision – spurred by an interest in cooking from helping his mother at home – would form the basis of Kam’s future career.

Grilled Lemongrass ChickenAs a graduate, Kam chose to pursue new culinary opportunities in the form of a cooking apprenticeship with Sodexo. In his first full time job, his persistence and resilience earnt him ‘Apprentice of the Year’ in 1994. Leaving the company to study further, Kam later returned to Sodexo in 2000 and has since been an essential part of the culinary team.

Currently, Kam is Head Chef at Loreto Mandeville where he prides himself on providing delicious meals to the students.

“I don’t really have an impressive ‘go to’ dish, but if I put my mind to it, I can produce great things,” Kam said.

“I came to realise early on in my career to be adaptive and ask questions. Every kitchen is different in so many different ways.”

Having been with the company for more than 20 years now, Kam has not only taken every opportunity to enhance his career but has started a family. He thanks the flexibility of Sodexo for working within an education sector which has given him the opportunity to spend school holidays with his beautiful children.
